If you haven't been to Chicken Fiesta before, you must come down tonight at 8pm for the GRAND opening.  Chicken Fiesta has been going through a serious face lift lately, and is now ready to show it to the public.

Though it has been going through this renovation for 3 months, service has never stopped, and they couldn't because their customers just wouldn't allow it! Chicken Fiesta has a very loyal following, and chances are if you live in PAP, you've had your dinner there at LEAST once a week.  Carmel Gabriel and Chef Johanne Laborde are co-owners of Chicken Fiesta serving up Chinese food and the coldest beers in Petion-Ville. They are especially know for their chicken wings and the almost 20 different sauces from; from their fan favorites Hot habanero, spicy garlic, and Asian Zing, to the most interesting Curry sauce.

Chicken Fiesta has not only received a new paint job, but what use to be their only floor is now a large living room of sorts.  They have knocked down walls and opened up the space giving you an instant feeling of "being home", as decorator, Daphnee Alphonse says.  "I wanted it to be warm, with the spirit of the caribbean. " They have also built up, adding another floor with it's own bar and V.I.P space.  There are also plans, in the near future, to add a third floor roof top area with a grilling station! They have also made changes to their menu, adding several new vegetarian dishes, something they note is lacking in Haiti (not to mention, I bug them every time I come in). The staff has also been increased for better service, and has been trained to deal with the most specific cooking request and dietary restrictions.

The owners describes the renovation as long, grueling, and often times very frustrating with the limited skill labor and the very expensive cost of materials.  You see, almost everything in Haiti is imported   Long gone are the days when a craftsman would pass done he trade to the next generation with exquisite goods made in country.  Regardless of all the drawbacks and set backs, the renovation is complete and looks amazing.  Come out tonight and see for yourself.

When asked what their wish was, Carmel says, "We wanted to offer the community something different. A place where people could come and kick back, enjoy good food and good services."  The pair has also hinted about live entertainment, thought they didn't want to give it all away.  Well PV is waiting Chicken Fiesta  Serve it up!
