GOOD HELP IS HARD TO FIND : ( vol1

On Thursday afternoon, after one year (almost to the day). my housekeeper decided to terminate our contract.  Not sure what happened, I thought we had a good think going.  

Now, I can just see all of my NYers rolling their eyes.  "Yeah, what problems, your housekeeper quit."  My people in Haiti know just what I mean.  Like it or not, it is a part of life.  A system that settles you up for failure if you ask me. In the states, we do it all.  "Bring home the bacon, and fry it up in the pan"- well the tofu.  Here, you have to fetch water, wait till they give electricity...  So you get into the habit/comfort of having help...until you don't : (

So now, I'm the cook! Her "retirement" also comes at a good time as it is also the 2 week count down till my birthday. YAAAYYYY!!  Not yay, I feel like I've gained a few pounds since the last bdy.  And of course, THE outfit.  Long story short, I need to lose weight and quick.  Now that I am the full-time cook I can better control my caloric intake, steps towards a much healthier (and hopefully thinner) me.  It's also fun finding out that there are soooo many other choices then RICE!! 

So I've decided to chronicle my dietary journey till the big D!  Well, at least you'll get some good recipes :  )

Friday DAY 1

PIZZA!!!

You will learn that most of my recipes just come to me,  Not only that, they usually come out of whatever is in my refrigerator.  

So i made two different Pizza.  The first was suppose to be my gourmet pizza   







I start off we a basic pizza recipe

, then do like I do, add your fridge. **SIDEBAR: I spread a pesto paste on the dough before adding my sauce.

I then added onion that I caramelized in olive oil.  Depending on the size, I usually use a whole onion. I love onions and when caramelizing the onions will reduce.  Spread the cramalized mix over the presto and tomato sauce mix.  **SIDEBAR: I usually make my own sauce.  Or at least try adding different spices and/or vegetables to spice up a blan bottled sauce. 


I then added anchoives.  A personal FAVE! Unfortunetly not a choice many others like when sharing a pizza.  Shot out to Irene, my anchovie sista. So, it's my pizza and I'm adding ANCHOVIES   



And then I pile on FRESH mozzarella cheese  (yes this makes a difference- well too me) 

Put in the over for about 30mins or until the cheese bubbles up into a gooey richness.  Garnish with a little fresh basil.  Let cool.  Cut and Enjoy
